A fast and crunchy snack featuring crispy air-fried artichoke hearts served with a creamy garlic aioli.


Ingredients

Main Ingredients

  • 2 cans Artichoke hearts (Use canned artichokes with minimal brine for best results.)
  • 1 clove Garlic (Minced for aioli.)
  • 1 tsp Garlic powder
  • 1 tsp Lemon zest
  • 2 tbsp Lemon juice
  • 1/4 cup Mayonnaise (Plain yogurt can be used as a substitute.)
  • 1/4 tsp Kosher salt
  • 1/2 tsp Smoked paprika (Regular paprika or cayenne can be substituted for heat.)
  • 2 tbsp Olive oil (For tossing artichokes.)
  • 1/2 cup Parmesan cheese (Optional, can be omitted for a dairy-free version.)
  • Cooking spray Cooking spray (For air fryer basket.)


Instructions

Preparation

  1. Preheat the air fryer to 400°F (200°C).
  2. Drain and rinse the artichoke hearts, then pat them dry with a paper towel.
  3. In a bowl, mix the olive oil, garlic, garlic powder, lemon zest, kosher salt, and smoked paprika. Toss the artichoke hearts in the mixture until well coated.

Cooking

  1. Spray the air fryer basket with cooking spray. Place the artichoke hearts in the basket in a single layer.
  2. Cook in the air fryer for 10-12 minutes, shaking halfway through until golden and crispy.
  3. Meanwhile, prepare the garlic aioli by mixing mayonnaise, lemon juice, and minced garlic in a small bowl.
  4. Serve the crispy artichoke hearts with the garlic aioli on the side. Enjoy!

Notes

For added flavor, toss in a pinch of smoked paprika into the aioli. If the artichokes are big, quarter them so they cook evenly. Store leftovers in an airtight container and consume within two days for best texture.
