Ingredients
For the Bark
- 12-15 large large Medjool dates, pitted (Keep Medjool for sweetness and softness. Soak if dry.)
- 1/4 cup peanut butter (Warm slightly for easier spreading.)
- 1/4 cup roasted peanuts, chopped (Can substitute with chopped almonds or pecans.)
- 3/4 cup chocolate chips
- 1 teaspoon coconut oil (Can substitute with butter if needed.)
- to taste flaky sea salt, optional (Use for added flavor.)
Instructions
Preparation
- Line a baking tray or large cutting board with parchment paper.
- Spread the pitted dates open to form a flattened layer. Press down to make an even sheet.
- Spread peanut butter on top and sprinkle chopped peanuts.
- In a microwave-safe bowl, melt chocolate chips and coconut oil in 15-20 second increments until creamy.
- Spread melted chocolate over the date bark.
- Freeze for at least 30 minutes. Break or cut into pieces and enjoy.
Notes
Store the bark in an airtight container in the freezer for up to 2 months or in the fridge for 2 weeks. Layer parchment between pieces to avoid sticking. Let sit for a minute after freezing before eating for softer bites.
