Description

This delightful 5 Ingredient Date Bark is a quick and comforting sweet treat made with dates, peanut butter, chocolate, and nuts, perfect for busy nights.


Ingredients

For the Bark

  • 12-15 large large Medjool dates, pitted (Keep Medjool for sweetness and softness. Soak if dry.)
  • 1/4 cup peanut butter (Warm slightly for easier spreading.)
  • 1/4 cup roasted peanuts, chopped (Can substitute with chopped almonds or pecans.)
  • 3/4 cup chocolate chips
  • 1 teaspoon coconut oil (Can substitute with butter if needed.)
  • to taste flaky sea salt, optional (Use for added flavor.)


Instructions

Preparation

  1. Line a baking tray or large cutting board with parchment paper.
  2. Spread the pitted dates open to form a flattened layer. Press down to make an even sheet.
  3. Spread peanut butter on top and sprinkle chopped peanuts.
  4. In a microwave-safe bowl, melt chocolate chips and coconut oil in 15-20 second increments until creamy.
  5. Spread melted chocolate over the date bark.
  6. Freeze for at least 30 minutes. Break or cut into pieces and enjoy.

Notes

Store the bark in an airtight container in the freezer for up to 2 months or in the fridge for 2 weeks. Layer parchment between pieces to avoid sticking. Let sit for a minute after freezing before eating for softer bites.
