A delightful spread of finger foods perfect for an Easter gathering, combining savory, sweet, and creamy bites for guests to enjoy.


Ingredients

Vegetables and Eggs

  • 1 pint cherry tomatoes
  • 1 small cucumber, sliced into rounds
  • 12 mini sweet peppers, halved and seeded
  • 12 small hard boiled eggs, halved
  • 1/2 cup olives, pitted
  • 1/2 cup pickles, sliced

Creamy Ingredients

  • 8 ounces cream cheese, softened (For herbed cream cheese)
  • 1/4 cup plain Greek yogurt (For herbed cream cheese)
  • 1 tablespoon chopped fresh dill (For herbed cream cheese)
  • 1 tablespoon chopped fresh chives (For herbed cream cheese)
  • 1/4 cup mayonnaise (For chicken salad)
  • 1 teaspoon lemon juice (For chicken salad)
  • 1 cup store-bought or homemade hummus

Proteins and Breads

  • 1 cup cooked and shredded rotisserie chicken (For chicken salad)
  • 1 package cocktail ham or deli ham slices
  • 24 small cocktail rolls or mini croissants (Preferably warmed)
  • 1 cup shredded sharp cheddar cheese

Garnish and Accompaniments

  • A handful crackers and sturdy bread slices
  • A few sprigs parsley for garnish


Instructions

Preparation

  1. Make the herbed cream cheese by mixing cream cheese, yogurt, dill, and chives until smooth. Taste and add salt if needed. Chill.
  2. Prepare the chicken salad by stirring shredded chicken with mayonnaise, lemon juice, and a pinch of salt. Keep it cool.
  3. Slice the vegetables and hard boiled eggs. Arrange them casually on the platter.

Assembly

  1. Fill halved mini peppers with a spoonful of herbed cream cheese.
  2. Lay out ham slices and tuck a little cheddar inside some rolls for simple ham and cheese bites.
  3. Spoon hummus into a small bowl and set next to crackers and bread. Add olives and pickles nearby.
  4. Place chicken salad in a shallow bowl with a small spoon, and surround it with cucumber rounds and tomato skewers.
  5. Finish the platter with sprinkled parsley and a few extra crackers.

Notes

To serve, set everything on a large board or plates across the table. Keep napkins handy and a bowl of lemon wedges for the chicken salad. For kids, place sweeter and softer bites on a lower tray.
